Saving potato latke batter for the next day?

Is there a chance I can make ahead the batter for potato latkes and not fry it up until about 24 hours later? Any way to make that work?

It will be safe to eat but the batter will turn an unattractive grey/brown and develop an unpleasant metallic taste.

If you absolutely MUST make ahead, make the pancakes now and reheat in the oven before servng tomorrow. OR try using cooked mashed potatoes instead of raw grated ones.

hm ~ I'm sure one could do anything ... but it doesn't take so long to grate the potatoes ... fresh is yummiest - not sure how they would last though cause we would eat them before the party

what if you peel the potatoes & keep them in cold water - does that give you a head start ...

Hm, I can keep peeled potatoes in cold water overnight (like in the fridge) and they'll be good for making latkes the next day?
