Now that winter is really here, im looking for recipes for good wholesome soups- pareve and fleishig-

ANy ideas? thanks!

DH loves soup and I find them extremely easy to make.
I've made the following:

Orange Soup-
Sautee: Butternut squash, sweet potato, pumpkin, carrots and onions.
Add water/ chicken broth, spice and boil until tender then blend in immersion blender.Cube potato and add onion soup mix or spices.

Potato Onion Soup
Thinly slice lots of onion rings and saute until they're just about as soft and slippery as spaghetti.

I'd love recipe for Yemenite soup. Does it have to be super oily? Whenever I eat by my Yemenite inlaws it is basically big chunk of potato with oily (albeit well spiced yummy) water and then some meat.

It's not necessarily oily. Really yummy! Comes with carrot, celery, beans, tomato paste, beef... Will give you exact recipe later

Yemenite soup recipe:
Saute a large onion in oil
When finished sautéing add 3 diced carrots and 3 diced celery with 3 crushed garlic to Saute for few min.
Then coat it with 3 oz tomato paste.
Add half cup beans (great northern) tablespoon paprika, salt, black pepper, any meat you like (I.e. Flanken, club steak) with water to cover and cook for 3 hours or more.

What is zuppa arancione?
orange soup made with sweet potato and carrots. delicious with gnocchi or on its own. if you want the recipe let me know.

Zuppa Arancione
2 tablespoons olive oil
1 large sweet onion, diced
2 large sweet potatoes, peeled and cubed (one and a half pounds total)
2 carrots, peeled and cubed (half a pound total)
1 tablespoon kosher salt (if you don't have kosher salt, use only 2 tsp reg salt)

Heat oil in a 3 or 4 quart saucepan. Add diced onion and sauté for 5 minutes, until translucent.
Add cubed sweet potatoes and carrots, and cover with 4 ½ cups water. Season with salt.
Bring soup to a boil. Lower heat, partially cover pot, and simmer for 25 minutes, until vegetables are tender.
Puree soup with a hand blender until smooth and creamy.
Ladle into bowls; garnish each bowl with 3 gnocchi. Serve remaining gnocchi on the side, for adding to the soup as it is being eaten.

I make my own gnocchi on pesach Tongue Out

Gnocchi
3 Russet or Idaho potatoes, scrubbed and washed
3/4 cup potato starch or tapioca starch
3/4 cup finely ground almonds
1 egg, lightly beaten
Kosher salt, to taste
(for gebrokts, use 1/2 cup each matzah meal and potato/tapioca starch instead of 3/4 cup each starch and almonds)

Fill a 3- or 4- quart pot halfway with water. Add the washed and scrubbed potatoes and bring to a boil. Cook for 25 minutes, until potatoes are fork tender. Drain the water from the pot, and set potatoes aside to cool.
In the meantime, whisk together ground almonds and potato starch, until well combined. Set aside.
Peel potatoes once they are cool enough to handle. Place potatoes into a large mixing bowl, season generously with salt to taste, and mash them with a potato masher until they are very smooth. Add egg and starch/almond mixture, and knead with your hands, until you have formed a dough which is easy to work and not sticky. Set dough aside to rest for 30 minutes.
In the meantime, fill a large pot with lightly salted water. Bring to a boil.
Divide dough into 4 portions. On a clean surface, roll each portion of dough out gently and carefully into ropes, about ¾-inch thick. Use a clean knife to cut the ropes into 1-inch pieces. Use the tines of a fork to gently make indentations in each 1-inch piece.
Drop gnocchi, a few at a time, into the boiling water. Do not crowd the pot. Allow the gnocchi to cook for 1 to 2 minutes, until they float to the surface. Remove with a slotted spoon; drain on a platter lined with paper towels. Repeat with remaining gnocchi.
Serve immediately.

Today I made an orange soup.
I sauteed onions and garlic in olive oil.
I added chunks of carrot, potato, pumpkin, zucchini and loads of sweet potato.
Cooked it and blended it.
Added salt and turmeric (not alot)
Came out delish.

I wanted to add quinoa but I didn't have any.

I recently made a really yummy red lentil soup.

-few onions
-6-8 carrots
-1 bag red lentils

Chop and saute the onions. Peel and chop carrots and add in. Pour in bag of red lentils and add lots of water (the lentils will absorb a LOT of it so you may need to keep refilling the pot)

Flavour with salt, pepper, garlic powder, onion powder etc.

Delish!!
