Roasted zucchini
zucchini
oil
salt and pepper to taste
Cut zucchini in half the long way. Top with olive oil, salt and pepper. Roast at 425 for half an hour.

is it pesach already?
you can broil any vegetable in a little olive oil & some spices spread single layered on a cookie sheet for about 8 minutes
