I made the recipe from the old Lubavitch cookbook this week.
I sauteed an onion in oil
Added 1 cup of kasha
1 egg
Mixed up the egg and kasha till dry and the grains were separated.
Added 2 cups of boiling water
1 tsp. salt.
Cooked for about 20 minutes.
Came out delish.
You can add a 1/2 cup of chopped mushrooms during sauteeing.

I adore kasha varnishkes but if you're looking for something different, I saw a recipe in KBD Entertains for a kasha salad with chickpeas and bulgur. Never made it but it looks interesting, actually very similar to something I already make just w/o the kasha. You don't have to cook the kasha or bulgur- you just soak them in boiling water or broth. If you want the recipe let me know and I'll type it out for you.

For something simple and easy, I often just add steamed broccoli, sliced almonds, and raspberry dressing.
We've had it as a side and as an entree. It goes especially well with baked chicken, especially if you're using peaches or apricots or something on your chicken.
