Hi, I'm anon since I posted this also on her cooking website but didn't get a response. How much of the other ingredients should I put in if I want to use a 5 lb bag of red potatoes?

Jamie's recipe calls for 6 large idaho potatoes, which is roughly about 4.5 lbs. total.
I am sure you can use 5 lbs. of red potatoes without changing the rest of the ingredients.
