Anyone ever made mock mashed potatoes, made out of cauliflower?
I saw this recipe and it sounds interesting. I would love to try to but would be even better if someone can tell me that it tastes good and doesn't just taste like mashed cauliflower.

Made it a few times. It's delicious but I knew it wasn't potatoes. Of course, I like cauliflower so that doesn't bother me.

The mistake is calling it "mashed potatoes". It's alway better to call it real whatever it is than fake whatever you wish it were. Taste is, among other things, tied up with expectations. When you expect potatoes and get cauliflower--eeew. Even if you like cauliflower.

Now I never made cauliflower with butter as I don't use butter, so I can't say whether the butter would make a huge difference. But I'm fairly confident that as delicious as this dish may be--with tons of garlic and butter, even cardboard would taste good--it won't fool you for a minute if what you crave is potatoes.

What you might want to try is making this recipe with half-and-half potatoes and cauliflower. You'll get some potato taste but fewer carbs than if you had straight spuds.

thing is, the recipe calls for pureeing the cauliflower, which IMHO sound really unappealing unless you actually like mashed potatoes from a mix. Myself, I prefer real taters with real texture because they were mashed the old-fashioned way with a hand masher. The other kind is fine for babies, invalids, and women who sip their soup through a straw to keep their makeup intact over Shabbos.
