I bought a bottle of heavy cream for some recipes that I planned on making. I only ended up using 1 cup so I froze the rest. Any ideas of what I can use it for? Recipes would be appreciated.

I use it in my coffee instead of milk. I'm on a low carb diet and that's low in carb! Lower than milk for sure.
There are many recipes like to cream it with spinach etc.

Yes, add 1-2 Tbsp sugar per cup of cream, and maybe some vanilla (1 tsp). Beat just until soft peaks form, or it will turn into butter. The finished product doubles in size, so use a bowl that is big enough.

and since when is milk considered a carb?? I'm also on a low carb diet. Not my first time. hearing that milk is a carb though is a first to me

I only like whole milk in my coffee. Skim milk or 99% make it too watery for me so heavy cream is a great alternative.

lactose is definitely a carb. it's a complex carb.

Lactose is a simple carb. It's a disaccharide, meaning that it's made up of 2 sugar units connected together to make a relatively small molecule. It's digested relatively quickly.

Glucose+ galactose=lactose(milk sugar)

A polysaccharide(complex carbohydrate) however,is composed of hundreds of monosaccharides(simple sugars) connected together in a long chained molecule. Starch is an example of a complex carb.

A complex carbohydrate is any carbohydrate containing more than 2 saccharide(sugar) units.

yes. monosaccharide = 1 simple sugar unit. lactose is a disaccharide = 2 sugar units. hence, lactose is a complex carb, which is defined as a sugar consisting of 2 or more sugar units. polysaccharides consist of three or more. they are also complex carbs.
