The Nine Days are coming up and I'm looking for ideas for meals for a person who avoids all dairy, gluten, fish, and soy, and limits her legumes consumption. Any ideas? TIA!

Tofu is soy. However there is now a hemp based "tofu". I think the bRand is Tempte. It's ok. Daiya makes quite a bit of soyfree, dairyfree stuff. Rice, rice noodles, corn tortillas are good. Potatoes. Almond milk, rice milk, coconut milk. Fruits and veggies. Contact a nutritionist. Flax seeds. Quinoa.

Grain salads (made with wild rice /millet/kasha/quinoa/gluten-free pasta)?
Vegetable soup.
Veggie burgers -- stretch a bit of beans with other vegetables so that it is not too legumey.
Does she eat lentils?

Why is this person avoiding those foods? Health? allergies? intolerances?
The only proteins I can think of are quinoa and eggs, if she doesn't want to eat beans or lentils.
Otherwise she will have to eat vegetables and carbs only.
