I have a gallon of milk expiring tomorrow. What can I make that uses milk that freezes well? I'm already making pancakes to freeze.

ice cream, yogurt, farmers cheese, custard...
is it whole milk, low fat, or skim?

I'd probably try a low fat ice cream recipe, then. or make some fruit smoothies and freeze them.

Mac and cheese, white sauce for pasta or pizza, cinnamon buns, milk itself freezes just fine too

Well first of all, I do freeze milk sometimes. So if it is an unopened container, I would do that.
Otherwise milkshake, coffee, and as some other posters mentioned, there's a big chance, that the milk will still be good to use tomorrow. The expiration date, is just an estimated date.

I always freeze milk without issue--and after the due date? taste it, might be fine.
