Orange ginger honey cake (sugarfree/no eggs)
Cake:
3 cups flour
2 tsp baking soda
tsp cinnamon
tsp coffee
1/2 cup water
2 cups honey
2 T vinegar
6 T oil
4 T apple sauce
cup of apple juice or orange juice or soy milk
Mix and bake in muffin tins or in 9 by 13 pan, at 350 for about 45 minutes.
Topping:
cup of honey
the cut up peel of an orange
few pieces of ginger
4 T rum or bourbon
Let the above simmer a few minutes. Poke holes in your cake as it cools and pour on top or serve with sauce.

This sounds really good! Have you made it? Is it moist? Is it very dense?

I know but I assume she meant that it doesn't have refined sugar-- just honey, apple sauce, juice, etc. Most honey cakes are sweetened with sugar so this is a lot more naturally sweetened, which I find appealing.
