Maple orange cranberry sauce
from good housekeeping
12 oz. bag of cranberries, fresh or defrosted
1/2 cup each of: sugar, maple syrup, orange juice
zest of an orange
salt and pepper to taste
Combine and bring to the boil; let simmer for about 15 minutes. Serves 8

I often make my own cranberry sauce with orange, but I would NOT add orange juice and zest at the cooking stage. I would instead add them AFTER cranberries are cooked with sugar/honey/whatever sweetener. Orange zest would turn BITTER if cooked.

I never had a problem with zest turning bitter in cooking. I use zest a lot.

I know this is from forever ago, but we went apple picking today and I bought fresh cranberries at the Farmer's Market.
Would this sauce taste good without the orange zest? I'm not such a zest fan, but I love the idea of maple-sugar-OJ-cranberry combo.......
