I've tried the KBD and kosher palette sesame noodles, but they never seem to taste as yummy as the caterers- anyone have a better recipe out there?

If you like spicy, add sriracha or chili garlic sauce (this stuff: http://thehungrygoddess.com/wp.....e.jpg NOT this stuff: http://www.cocktaildb.com/stat.....0.jpg). Loads of flavor!
Two tips in preparation: use a wide, shallow pan (like a 9x13 pan) instead of a bowl to let the noodles marinate. This will allow the sauce to seep into a greater amount of noodles. Also, toss the noodles with tongs several times between making the dish and serving it. I find it best to make it at least a day before, and toss the noodles several times to ensure they are all coated. I don't add scallions until I'm going to serve it, so they stay crunchy.
You could also make extra sauce (1.5x recipe) and reduce it down in a sautee pan before you coat the noodles. This will concentrate the flavor more, and the thicker sauce will 'stick' to the noodles better/faster. I am sure every caterer is different, but some sesame noodles from caterers that I have had have a thicker 'teriyaki' type sauce, and the KBD sauce is very thin.
I also think seasoned rice wine vinegar and fresh ginger are winner combos with the typical sesame noodle ingredients (soy sauce + sesame oil + sugar). I cut down on the sesame oil and add some rice wine vinegar.
