My chullent is fully cooked and I usually leave the crockpot on low right before shabbos but it gets very dark. I'm thinking of leaving it on warm. Will that even keep the chullent hot?

the warm might make it rot ...
that's why I like crock pots with more that just warm/hot settings ...
the temperature dials can be more adjustable 275°

Every slow cooker is different; you need to try it. I keep it on warm every week. If it isn't hot enough, I'd cover it with a dish towel or some foil in the glass cover.

It really depends on your individual appliance. Try it during the week on a test run.
My Hamilton Beach keeps the food piping hot on the warm setting.

Mine on warm has kept things at 140 or greater. I've taken the temperature a few times during the week (after leaving it overnight on warm). It's a "Crock-Pot".

No - it keeps the food at an unsafe temperature. The manual should say this.
I use mine all of the time and leave it on low for Shabbat.

I havr the Perko crockpot. I leave it on low over Shabbos, it does form a dark skin on top but it's good and hot. It has an Auto setting too but don't know What's the difference between low and auto. If you have the Perko crackpot and know the difference Please share. Ty.

Where have you read that? The keep warm setting is specifically designed to maintain a safe temperature after cooking is done.

It really varies widely depending on which model you have. There are some that are not hot enough to keep the food from spoiling and there are some that are. There is no universal temperature for each setting.

If you have a problem with food burning or getting too hot on Low setting, you can insert a thick foil between the heating element and the pot. (That's the setting I use, for my crock pot, warm setting is too low of temperature, had once had to throw away a whole pot of veggie soup which fermented and got yucky.)

I had a manual crockpot brand and always put it on warm before shabbos....the low was way too hot. I did this for 5 years with no problems.
