Morah Perel's challah recipe is so easy but not enough to make a bracha on what you burn:
I've already cut down on honey, fat and salt.
2 packages yeast
1 teasp. salt
1 teasp honey (I use molasses)
1/2 cup very warm water
Put all this together for five minutes to be sure that yeast is good (it has to bubble)
Add 1/2 cup oil
1/2 cup honey
3 well-beaten eggs (I use egg whites for two of the eggs)
6 1/2 cups flour (I use 3 cups whole grain & 3 1/2 cups high gluten)
about 1/2 cup water (add slowly as needed so that dough is not too stiff and not too sticky. (Part of my whole grain flour is 1/2 cup of oat flour and some wheat germ and milled flax seed but this is just my thing. Oat flour absorbs a little more water so if you're not using any oat flour, you may want to add a little more regular flour at the end if your dough is sticky.
Once combined into dough, let rise with a damp cloth for at least a half hour.
Make into loaves and let rise for another half hour or hour (if two loaves, bake for 32 minutes, if three small loaves, bake for 26 minutes). Bake at preheated 350.
Tip: If you like to make the dough ahead of time, you can freeze the shaped dough and just let the shaped dough rise. If you like to make the dough on Thursday night, you can shape the loaves and leave in the fridge overnight. Take out on Friday morning and leave on the counter until they reach room temperature. (Probably a few hours...I leave them out until I get home from work). Then bake them.
Delicious and the easiest recipe I've tried.

Here's the recipe I use. It always comes out great (also very easy and quick).
It's called:
Always Successful Challah
9 Cups Flour
1 1/4 Cups Sugar
3 Pk. Yeast (about 7 tsp.)
1 T. Salt
2.5 Cups Warm Water
1/2 Cup Oil
4 Eggs
This makes 4 nice sized Challahs!
(If you end up using this recipe - please let me know how it came out!)
P.S. I made 2 batches of this recipe for Shabbos, the other using whole-wheat, and made Delicious Onion Rolls out of them.)

Here's mine
5lbs flour
1 2/3 c sugar
1 cup oil
2 1/2 T salt
5 T yeast
5 c very warm water
Mix 1/2 the flour with the sugar, salt & yeast
Add the oil & water & mix
Add the rest of the flour
Then, knead, rise, bake etc.

I make Momof3's recipe, but with 1/3 whole wheat flour and 2/3 white flour.
It's delicious!
