Hi,
I'm looking for suggestion what to make for Purim seuda. Ideally something light, quick to make, somewhat kid friendly and fresh . All suggestions are welcome

I made a bbq rubbed chicken in the crockpot for a potluck last year. It cooked while we were out. Since it did not have a sauce it was not heavy. This is the recipe:

I actually serve a full, several course meal.

But for something quick and easy and light, how about chicken lo mein? I marinate chicken pieces (I use the pink KBD cookbook recipe for chicken wontons) and stir-fry it with frozen snap peas, babycorns, and mushrooms. Add to spaghetti. Yum!

All good ideas , but I was thinking of a little more yom tov like than spaghetti and meatballs and maybe small plate type of things

Im doing Mexican something fun a different for a change . I'm using a sombrero in the center of the table with chips and salsa. Its easy
Mexican Salad ( mix salad with taco chips) and Italian dressing
tacos
beans
chopped meat with mexican seasoning
sliced chicken with peppers and onion all to fill tacos and tortillas

salmon kebabs with veggies,
fish goujons
cashew, peppers and noodles salad
israeli salad
fatoush salad
coleslaw
potato salad
pasta salad
tabouleh
humous techina, babaganoush
stuffed sabich pittas
stuffed mini bagels, smoked salmon, egg, cream cheese and tuna
Also buy ready mini quiches, borekas and sambusaks
fresh fruit platters, sweets and popcorn for kids ( very rare treat!)
huge selection of hamantaschen ( ready bought!)
selection of cheeses, bread rolls and pittas. Pickles, olives, baby tomatoes, chutneys,

simple buffet, really easy to prepare in advance, very relaxed and if extra visitors appear, more than enough to go round!!
What is left over will be used up quickly by Shabbat lunch time!
