Recipe is below. BUT I use 1.5 cups sugar, .5 cup brown sugar, 1 cup oil (or sometimes half half with margarine), no apple sauce, 1 cup water instead of 1 cup soy milk, and I always mix chocolate chips with the streusel. Tastes really good!
Ingredients:
sugar - 1 1/3 cup
brown sugar - 1/3 cup
oil - 1/2 cup
eggs - 4
flour - 3 cups
baking powder - 1 tbsp
vanilla sugar - 1 tbsp
salt - 1/2 tsp
soy milk - 1 cup
coffee - 2 1/2 tbsp dissolved in 2 tbsp water
unsweetened applesauce - 1/2 cup
Streusel:
oil - 3 tbsp
flour - 1 cup
sugar - 1/2 cup
Glaze:
coffee - 1/2 tsp
hot water - 4 tsp
confectioners' sugar - 1 cup
oil - 1 tbsp
Instructions:
Preheat oven to 350°F (180°C). Beat sugars and oil together. Add eggs, beating well after each addition. Add dry ingredients alternately with wet ingredients, and mix until well combined. Add applesauce at the very end and mix just until folded in. Pour into a greased tube pan.
Mix all the streusel ingredients together by hand in a small bowl. (You will have some left over, which can be used either on another cake, or on your challos before baking, or frozen for later use.) Sprinkle streusel onto the cake batter, and bake for 55 minutes or until toothpick inserted comes out clean and dry. (For cupcakes, bake for only 20–30 minutes.)
For the glaze, mix all the ingredients together in a small bowl. Add more water or confectioners’ sugar as needed to achieve desired consistency. Drizzle over cooled cake. Freezes beautifully.
Note: To make this cake even less fattening, use just 1/3 cup oil or even ¼ cup oil and the rest applesauce to equal 1 cup.

There is an amazing recipe in Sweet Secrets by Carine Goren. Here is my version. The one in the cookbook calls for butter and sour cream.
Cake
1.5 sticks earth balance buttery sticks or other margarine (3/4 cup)
1.5 c sugar
1 tsp vanilla extract
3 eggs
3 cups flour (I use half AP flour and half whole wheat pastry flour)
1 tbsp baking powder
1 tsp baking soda
1/2 tsp salt
2 c soy milk
Filling
3/4 c brown sugar, packed
1 tbsp cinnamon
1 tbsp cocoa powder
1 c walnuts, chopped (sometimes I use pecans)
Topping
Powdered sugar
1. Preheat to 350 F
2. Cream margarine, sugar and vanilla. Add eggs one at a time beating well after each egg
3. Sift together dry ingredients, and add to the the above, alternating with the soy milk
4. Prepare filling, set aside
5. Pour 1/4 of the batter into a greased bundt pan. Sprinkle 1/3 of the filling on top of the batter, and repeat to achieve four layers of cake batter and three layers of filling.
6. Bake for about 55 mins.
The cookbook is amazing. I have made so many of the recipes parve and they turn out really well. I make this coffee cake for shabbos morning.

If you specifically want crumbs, make the cake in a 9x13 and possibly add vanilla and egg to the crumbs to give it something more.
In a tube pan the crumbs just don't work on top (bottom) of the cake.
