I am really not the creative type. I am making brownie hamentashen with my kids and will use them in Mishloah Manot, but am at a loss for what else to include. I would rather not include candy or junk, but need to keep it simple / easy to prepare. Any ideas?

Mine consists of hamentashen and home made pitas.
Otherwise your second food can be salad, rice, fruit, fresh vegetables, soup, nuts, dates, or some sort of drink. A couple of years ago, I sent out hamentashen and a chic pea salad, which everyone loved.
Hope this helps.
