roll it out into rectangle - spread filling of many possibilities ... I.e. sugar/cinnamon/vanilla/pareve milk mix to a paste ... roll up like a jelly roll ... slice & bake now you have cinnamon roll cookies

You can also roll into balls, flatten slightly and put a finger indentation in the center and fill the little hole with jam, chocolate filling or whatever else and bake.

If it's sweet dough, just roll it out, cut into whatever shape you like, and bake it as is.

Yum, I wish I had some of my hamantashen dough left over, to make cookies for Shabbat.
I'm craving those double-decker jam-filled cut out cookies like they make in bakeries...
