I partially cover with hats/scarves. I wear hats more often during the week, but I've also started wearing them on Shabbat this winter and I love the ease! Also, no risk of discovering an accidental knot 5 minutes after dh has left the house for shul.
No clue where to look for summer styles that are nice enough for Shabbos (in Israel), or even what styles to look at. Pics/links to places that sell them, even if they don't ship here, would be appreciated just to get ideas. TIA!

Summertime you can get away with a more casual look than winter, so unless a hat looks like something you would wear hiking or to the beach (denim, chambray, sunbrella stripes, e.g.) it should be fine. Most straw styles will work, esp. if you dress them up with a silk scarf, flower or brooch.
