AHHHHH Lost all of my Pesach recipes!!!

I've searched and searched to no avail. We moved recently. I found a lot of recipes on line but am still missing some of my staples. If anyone has any recipes for the following items, I would really appreciate if you posted it. no gebrochs and no whipping please. I need recipes for apple kugel, blondies, easy cucumber salad and a tuna loaf (casserole). Thanks in advance!

This looks good and quite versatile. Corn starch is easily replaced with potato starch.

I would probably use a bit of chopped bell pepper, add salt and whatever seasonings I have on hand and leave out the pimento, thyme and sage on pesach.

2 cans (5 oz) tuna, drained and flaked
1 cup grated peeled potato
1 cup grated carrots
½ cup water (for simmering)
½ cup chopped scallions
1 tablespoon chopped fresh parsley
1 tablespoon chopped pimiento
1 clove garlic, minced
3 large eggs
1 teaspoon dried crushed thyme
¼ teaspoon ground sage
2 tablespoons corn starch
2/3 cup shredded Mozzarella cheese

Preheat oven to 350°F. In a sauce pan steam potato and carrots over simmering water for 5 minutes or until tender. Combine tuna, steamed potato and carrots, onions, green onion, parsley, pimiento and garlic. In small bowl, stir together eggs, thyme, sage and cornstarch. Combine egg mixture with tuna vegetable mixture. Pour mixture into prepared loaf pan. Cover with foil and bake at 350°F for 20 minutes. Remove foil, sprinkle cheese on top and bake an additional 10 - 12 minutes.

BLONDIES

mix everything in 1 bowl
4 eggs
1 cup sugar
1 cup light brown sugar
1 cup oil
3 teaspoons vanilla sugar
3 teaspoons baking powder
1 cup potato starch
1 cup chocolate chips
1 bag ground nuts [6 ounces/171 grams]

bake in a 9x13 pan 350 40 minutes
should be a bit underdone
