Which of these can be made ahead, some frozen...

and still taste almost as good?

Right now, my cooking list for the day of erev pesach is a bit daunting. But we really want everything we make to be as delicious as possible. Which of these can I move back a day or two before?

(Note: we broch.)

-Seder foods (check maror, charoses, roast egg & bone, potato for karpas)
-Oven roasted potato
-Baked salmon
-fried cauliflower
-Fry eggplant for eggplant parm (2nd lunch)
-Chocolate mousse, meringues with extra whites
-Thai quinoa
-Check strawberries
-Pesach rolls
-DH makes steak and brisket
-Stew/yapchik for first day lunch

most food can be made the day before erev Yom Tov.
(And often I specifically choose menu items that can be frozen and/or made in advance.)
Seder foods: day before
Prep and season salmon for baking: day before
Prep and measure dry part of coating for cauliflower: way in advance
Fry eggplant in advance and freeze, assemble frozen rounds erev Yom Tov and put in fridge
Chocolate mousse can be frozen, seal with saran wrap
Meringues: holds for number of days in an airtight container
Thai quinoa: cook quinoa a few days in advance and keep in container in the fridge, assemble for thai salad erev Yom Tov
What will you be doing with the strawberries?
Pesach rolls: measure out dry ingredients in advance
Brisket: make in advance and freeze
Yapsuk: shred potatoes before ready to assemble
