Next year, my two toddlers will be in preschool and it's about 5 minutes drive away from my house. We're thinking of getting a minivan. The director of the preschool told me that they have carpooling. I'm interested to know more about it since I might not be able to take them every single day to school. So how does carpooling work?

In general, carpool means I take your kid sometimes, you take my kids sometimes. Different carpools have different setups: which days, morning vs afternoon, etc. It depends on your schedule and how many families participate.
