Looking for amazing salad recipe or anything else you can do with fresh spinach other than sauteed with garlic/oil. Bonus points if its healthy

amazing spinach salad
2 bags baby spinach leaves
2 cucumbers
1 bunch radishes
1 bunch scallions
1/2 c oil
2 T lemon juice
2T vinegar
1 tsp. salt
1 tsp. sugar
1/2 tsp. dried mustard
pinch of garlic
mix all dressing ingredients together, pour over salad right before serving

Spinach, avocado, cucumber, red onion, clementine segments (or canned mandarin oranges), pomegranate arils (or craisins when pomegranate not in season), a few toasted walnuts or sliced almonds sprinkled on top sometimes.
Any type of vinaigrette, balsamic is especially good with this.
I serve with dressing in a separate bottle so people can add as much dressing as desired, I like it without dressing too!

I use it as a base for almost all salads I make. I also just throw handfuls into most dishes such as pasta, chili, eggs, chicken. I find it to be not super flavorful so it mixes in with a lot of flavors.

At the risk of sounding crazy, what exactly is the 2 tbls vinegarette? vinegar? red wine vinegar?

Not sure if you were specifically looking for a side dish. This is more of a one-dish stir fry using fresh spinach but you add right at the end so they are basically just "wilted" a bit.
Sherry lasts a LONG time unlike other wines. Most Chinese recipes use sherry so it's a good pantry item if you like Chinese food.
Velvet Chicken with Mushrooms, Spinach, and Ginger-lemon Sauce

Recipe By: Bon Appétit
Yield: Makes 4 servings
Summary:
Offer either brown or white rice and Asian beer, like Tsingtao. The chicken is especially tender because of the egg white and cornstarch coating.
Ingredients:
3 tablespoons fresh lemon juice
2 tablespoons soy sauce
2 tablespoons dry Sherry
2 tablespoons finely shredded peeled fresh ginger
2 teaspoons grated lemon peel
2 teaspoons sugar
1 large egg white
1 tablespoon cold water
2 teaspoons cornstarch
12 ounces chicken tenders, halved lengthwise
1 tablespoon vegetable oil
8 ounces fresh shiitake mushrooms, stemmed, caps thinly sliced
1/2 large red bell pepper, thinly sliced
2 large garlic cloves, minced
1 6-ounce bag baby spinach leaves
Directions:
Mix first 6 ingredients in small bowl for sauce. Mix egg white, cold water, and cornstarch in medium bowl; mix in chicken. Let sauce and chicken stand 15 minutes.
Heat wok or large nonstick skillet over medium-high heat 1 minute. Add oil and tilt to coat. Add chicken; stir-fry 2 minutes. Add mushrooms, bell pepper, and garlic; stir-fry until mushrooms are browned at edges, about 3 minutes. Add sauce; cook until sauce is reduced to glaze, about 1 1/2 minutes. Mix in spinach and toss 1 minute.
