Which hechsherim would you use on wine, which wouldnt you use?

Not sure why the OK isn't on your list. There are a number of very good boutique wineries in Israel under the OK (probably for international marketing purposes) along with an Israeli hashgacha.

You also forgot Paris Beth Din, Rabbin Rottenberg, Rabbin Frankfurter (Adath), Strasbourg Beth Din (they assign hechsherim on really wonderful French wine), possibly Lyonnaise BD. There's another Milan hechsher (Benilow?)
Personally I'm not too fussy about who gives hechsherim, but I would definitely want to see information on if the wine is mevushal or non-mevushal.

Ah yeah, we have OK wines also. No Rabbanut wines as of now and most other hechsherim also not. Basically the ones described. We are looking to expand our selection. Thats why I'm asking Because here most ppl wont drink anything thats not Bedatz Eda HaChareidis or Weissmandl, New York or the Viennese hechsher (Rav Schwartz). If the wine only has an OU, some wont buy it. So I am looking for "unversally" accepted hechsherim. I know the ones that are considered reliable for foodstuff but not necessarily for wine, as ppl tend to be even more machmir with wine in some instances.

I'm curious what issues the more stringent hechsherim address with wine. Additives? Wine left where non-Jews can touch it? Insufficiently frum Jews allowed to handle it?

I think its mainly politics. For sure nothing affecting halacha as severely as trayfening up the wine. Its like with food or shechita. Your community prefers a certain way, then thats where you hold by...

Rabbanut is generally irrelevant, as least in the U.S., because all the Israelly wine also had a US hashgacha or two. Usually ou or ok, sometimes weismandl or square. The only exception I've seen is otzar beit din wine, which op's crowd probably won't go for. It doesn't matter that the local rabbanut does all the work, the U.S. consumer buys based on ou and ok.
OP: also add Feigelstock to your list for cheap South American wines.

Otzar Bet Din can only be consumed in Israel.
Kosher stores should not be importing it.
