Hi, I am looking for ideas for appetizers for yomtov meals.
here are my preferences:
1) Parev
2) Fruit or vegetable based
3) No (or very little) added sugar
4) To be served cold or room temperature
So far all I have come up with is fruit soup, fruit salad and Lettuce salad with salmon. Any other ideas? Thanks in advance.

Grilled vegetables! Easy, diverse, makes a nice presentation, and delicious hot or cold.
I grease a cookie sheet with olive oil, then lay the vegies in a single layer. Drizzle with olive oil again, and shake with kosher salt. Bake at 425-450 for 30-45 mins. depending on your oven and the type of vegetables. I've used zucchini, yellow squash, eggplant, all peppers, carrots, and purprle onion.
I don't turn them, and they come out charred on the bottom, which we like.

Similar to the above, you can do sliced apple rings (cored), and drizzle with maple syrup and cinnamon.
Another possibility is sweet potato fries, tossed with a little cornstarch and spices (cumin, paprika, coriander, garlic powder, whatever you like). They're delicious fresh, crunchy on the outside, although the caveat is, they tend to turn soft and mushy once cooled and re-heated.
I've also done sliced carrots, covered, in a deep tin; drizzle with olive oil, lemon juice, honey and kosher salt. Bake at 425 - 450 for 1 1/2 - 2 hrs. Also delicious hot or cold.

Fresh melon
Fresh grapefruit with strawberries

Other played salad
Baby spinach with roasted pears beets and pecans

You can serve colorful grilled vegetables served at room temperature in a tortilla bowl for aesthetics.
You can do an all vegetable bruschetta zucchini.
Creamy low fat zucchini soup or cauliflower soup sprinkled with pine nuts and/or pesto.
Sliced avocado salad.
Humus and/or guacamole in little shot glasses with veggie stix standing up.
Vegetable kebabs served over a drizzle of sauce.

fruit salad or any combo of fruit. For example, last shabbos we had a couple of watermelon slices with mango cubes sprinkled on top.

Stuffed Tomatoes:
X number of large tomatoes
Bread crumbs
Eggs
Fresh chopped garlic
Chopped Scallions
Chopped Spinach
Chopped Parsley or Cilantro
Diced sun dried tomatoes
Spices
EVOO
9x13 tins
Method:
Pre-heat oven to 370 F
Cut tomatoes in half, remove pulp and set aside (use knife and large spoon so pulp is in one piece)
Combine all ingredients, except for EVOO
Add a few drops of EVOO in each tomato half
Place stuffing in each half
Place pulp on top of every stuffed tomato
Sprinkle each stuffed tomato with EVOO
Cover with foil , place in oven for approx 1/2 hour or so
Uncover and continue cooking until they look done
Enjoy!
