Am I allowed to give someone a bottle wine when I join them for a Seuda on Shabbat? If they don't carry and I do is it not polite for me to carry it to them? What if it cannot be used until later because it's not chilled? Should I give it to them on yomtov instead?

Impolite depends on how strongly they feel against the eruv. I know some Who would gladly drink wine you carried, when they would not carry, and others who would consider carrying in their local eruv to be chillul Shabbat and wouldn't touch the wine. The latter group being in N.Y., of course.
