Flounder is a very delicate non-oily fish.
It lends itself well to being wrapped in foil or parchment (en papillote if you want to sound fancy. ) this keeps the fish moist and infused with the flavors.
I put an individual serving of the fish on the parchment or foil and then put vegetables on top - halved cherry tomatoes, zucchini, summer squash sliced work well. Then seasonings - salt, pepper, a little garlic and then what you like - I.e. choose tarragon, oregano or other herbs. I add a splash of white wine for flavor and moistness. And then seal up either the foil or parchment for each serving.
I then stick all of the wrapped parcels in the oven for about 20 minutes.
ETA. if you like pesto, then just use pesto as the sauce with the fish and veggies.
Very healthy, tasty and easy.
