Im looking to reduce and Ive chosen pareve ice cream to be my only splurge/treat. The home- made stuff is made primarily with eggs and oil or unnatural whip.

Trader joes. We eat the vanilla, and I've mixed it with things to make other flavors. There's also a chocolate cherry.

If you have a Trader Joe's near you, their vanilla and cherry-chocolate-chunk pareve ice creams are very good!
relatively "real" ingredients.
The best pareve (DE) ice cream I ever had was this:
OH MY GORSH. SO GOOD.

Yorgood pareve frozen soy yogurt with specially formulated cultures that are not affected by freezing (most are). Currently comes in vanilla & pom-berry. Add your own healthy chocolate chips.
I can't find it in many stores & the web site listed on the carton doesn't seem to exist but I think made by Abe's Ice Cream in Montreal.

I have tried many homemade coconut milk ice creams with my ice cream maker and they really arent good...
Coconut bliss company makes an excellent one. It has very few ingredients but does use agave which im not keen about, however a treat is a treat. The mint galactic is excellent.

Coconut oil instead of what? The coconut milk? How will it whip then? It will freeze like a brick!

If you don't have an ice cream machine simply freeze till almost set & process with an "s" blade in your food processor. |
I have tried similar recipes and they either taste like a can of coconut milk with some vanilla and sweetener or they refreeze very hard. How do you get this one to taste good and refreeze? Do you use a company of coconut milk with a lot of gums and additives?

We make homemade sorbets that are nothing but fruit, water and sugar. You can use frozen fruit, too, which is easier and cheaper. You can also play around with adding liqueur (for flavour and to make it softer when freezing.) It's pretty high sugar, but non fat and no weird dairy substitutes.
We just made this a few weeks ago, using about half a bottle of wine and water to make up the difference, and it was lovely:

In general, I've found you have to tweak sugar in these recipes, because fruits have different levels of sweetness depending on when/where they're harvested, and everyone has different tastes, so I usually start with half the recommended sugar and increase until it tastes right. We have a $40 ice cream maker from Wal-Mart, nothing fancy, and it works as well as the super expensive one a friend has!
