I need ideas for nice, not-too-monotonous main course ideas for YT using chicken.
We don't eat red meat. We do eat turkey (usually our YT mainstay) but our local butcher just told us he will not have turkey available until after YT.
Chicken can be ground, cutlets, bone in, stuffed--open to any variation as long as it's yomtov'dik and not too much trouble to prepare.

Debone chicken bottoms, retain skin. Stuff with either cranberry wild rice, shredded vegetable saute, or kishke... Roll tightly. Season or pour sauce over. Bake.
Hoisin glazed timbales with dark ground chicken baked in muffin tins.
Dark chicken rolled roast. Dig a whole through the middle and stuff. Bake. Slice when cold. Pretty.
Chicken wing lollipops.
Fried chicken wontons with apricot dipping sauce.
Kishke stuffed chicken.
Pistachio chicken skewers with blackberry sauce.
Honey pecan chicken with apricot chutney.
