I put my carrots in the food processor (raw) with the s-blade and do about a carrot per jar.
I also do the same recipe and substitute zuchinni instead.

This recipe is excellent. And healthy. I make it all of the time, (with white whole wheat flour). We like it with craisins and walnuts (no nuts for rosh hashana though).
