I suggest using Julia Childs or Martha's recipe. They have very good techniques for bringing your paste to the proper texture without it breaking.

I like Little Mage's recipe. I use Alton Brown recipes all the time.

I would just make whipped cream or use store bought ice cream. I believe those are called profiteroles. Its one of my favorite childhood deserts.
