There is an ingredient that I skipped - marrow bones to make it fleishig. Not sure exactly but at some point you are supposed to take them out.
Leek soup (BY cookbook)
2 Tbsp oil
3-4 leeks sliced, using white part only
1 medium onion, quartered and sliced
2 celery stalks, sliced (I left this out and it is still very good)
4 medium potatoes, cubed
7 cups of water (divided)
3 Tbsp onion soup mix
salt
pepper
Sautee leeks, onions, and celery for 10 minutes over medium heat until cooked but not brown. Add
potatoes, 6 cups of water, onion soup mix, salt and pepper. Bring to a boil. Cover and reduce heat to
medium low. Cook until vegetables are soft, about 30 minutes.
Blend until smooth, add remaining 1 cup water and reheat on low flame.
(I skipped the last cup of water because my soup wasn't thick after I blended it.)
