Any idea how I can make latkes on Friday that will be good to heat up and eat on Shabbat lunch? Would this even work?
(off work on Friday for a change, but going out for dinner that night...)

You can warm them uncovered on a flipped cookie sheet over a plata/blech. Put directly on blech a few minutes before serving to get very hot, but be careful not to burn.
Not as good as fresh, but I think this would be the way to go for shabbos day.
