My new oven must be slightly smaller because it's the second time this happened. Now two of my beautiful challos have bald spots. Sad

Prevention tips for next time, anyone?

Try rearranging racks and baking less challahs at a time so you'll have more space

Maybe you put too much dough?
If you say your oven is small, then you might need to bake in 2 shifts.

When baking round Challas I usually don't have enough space for all of them. I leave one or two out. They don't come out as pretty, so I don't use them when I'm expecting company.

I only use 1 rack. It doesn't always happen. I guess it depends how much the dough rises. It's a 6 pound recipe. Not that much, right?

I am hesitant to use both racks. Won't the challos bake at different rates?

Try putting a piece of baking paper between them

even if challah bakes at different rates ... half way - switch shelves

also try placing them in the 1 in the oven back sideways the other in front sideways

last idea is to make them smaller and with the extra dough have a smaller challah or roll to eat hot

Another point is - what kind of dough do you make. Some dough recipes are more firm, others are more flabby and more likely to have Challos that stick to one another.
