Your fish store will do it for your when you buy it. Just tell them 1 in. cubes. If I have to do it myself I buy things slices filleted and freeze it so it cuts neater.

Fresh and easy has a great recipe. I've cubed it myself. It's not so easy, I prefer to buy it cubed already.

I cut it with a really sharp knife when partially thawed

*edited because autocorrect felt knives are nice Wink

I find the hard part is removing the skin. Cutting into cubes is simple.
I use a sharp knife and try to stay as close to the skin as possible so I don't lose flesh.
Cut into nice size cubes (a few larger cubes nicer than a bunch of smaller ones), marinate for a few minutes, thread onto skewers and bake briefly until just done.

I just pull off the skin by hand.
Then cut into cubes using kitchen shears.

What I've done for skewers instead of cubes is to cut long thin slices from a skinned filet and threaded those on the skewer. Looked really nice.

I don't know if this is stating the obvious but since no has said it outright - you cube salmon when it's raw, not after its cooked.

Lol. Just in case that was the question.

I cut off the skin first, sometimes pull it off with a paper towel, then cut the filleted slice with a sharp knife.

Do it frozen.
I freeze my salmon when I buy it and then thaw it for 15 minutes to be able to remove the skin easily and slice any way I wnt it.
