I made a fresh pot of chicken soup last week. It's been in the fridge all week. Is it okay to eat or should I throw it out?
(I just had a baby and I clearly am not keeping up with basic housework...)

I think a week is too much...
But if it smells great, you can try a bit and taste it.
The odor can help you decide

I make chicken soup on friday, serve it for shabbos, and if theres a lot left, store it in the back of the frig, add veggies, and serve again the next shabbos. We have sensitive stomaches, and it has never bothered any of us.

I wouldn't leave it longer than a week, but I'm paranoid about food. I don't actually know what food safety guidelines are.

I never had problem keeping chicken soup in the fridge for one whole week. I make my batch on Wed night, skim off fat, and serve whatever is left from Fri night for Mon or Tue supper with pasta.

Inevitably, when I serve chicken soup on Sunday, my husband gets an upset stomach. Maybe its just him.

Depends on the fridge. If it's in a cold part of the fridge, and people aren't opening the fridge day and night, it probably will be fine. Near the front of the fridge and/or not such a great fridge, no.
I used to l'chatchila make a batch of soup on Friday and have it for two Shabbatot, and it was fine.
