My cooked salmon was left out for about 2 and a half hours before it was remembered and refrigerated . The house isn't hot but it isn't cold either, just kind of in between. Is it still ok to eat?

I'd eat it. Caterers put out cooked salmon, and it's on the buffet for longer than 2 hours usually. They wouldn't do it if it were dangerous.
When in doubt, give it the sniff test. Taste a tiny bit, and if it seems off, spit it out and rinse your mouth. Our senses are exquisitely designed to prevent us from getting food poisoning.

I set my table shabbos morning and sometimes it can take 2 hours before my husband comes home- it's not a problem.
