Does anyone know of a Sweet brand of Gefilte Fish,
either frozen, in cans, or in a jar,
that does not have spices and/or pepper?
When my elderly mother eats regular Gefilte Fish,
she gets burning in her mouth, because her mouth is sensitive.
Any advice would be appreciated.
Thank you.

find a non-gebrocht frozen roll - they hardly put anything in it ... then cook it with a little sugar and carrots and onions
could salt be bothering her ?

If you are in the US, check out Ungar's. It says it contains "spices", but I find it to be very bland. I don't know how sensitive or allergic your mother is, but it's worth a try.
Otherwise, you can ask your local fish monger to grind fish for you to cook at home (carp, cod, haddock, etc.)
Or just make plain baked salmon.

I haven't bought in awhile but the classic bottled gefilte fish generally has one labelled "sweet". I don't think they are particularly spicy or peppery as I generally have to eat with a lot of horseradish to give it the sweet and pungent flavor.

My family likes Zevi's gefilta fish rolls. It's perfectly sweet and not "mushy" (my kids words). I've tasted many companies. This took the prize!
