Seeking sweet potato muffins that don't require any form of parve milk. Can be healthy or not. All the ones google found call for milk. Thank you!

Try substituting apple juice for the milk. Add a teaspoon of cornstarch or potato starch to the flour and sift well, so they will hold together better.

Sweet Potato Muffins

3 sweet potatoes peeled & cooked till soft (abt 1/2 hr)
3 eggs
salt
pepper
1/4 cup oil
drop garlic powder
1/4 teaspoon cinnamon

Drain all water from potatoes
Add rest of ingredients
mix well
Spray muffin pans well
Add mixture till top
Spray more onto muffins

Bake on 400 for 45 min
