I need some recipes. From scratch!
1. A non-dairy, non-soy, alternative to cheesecake. I'm thinking of a pudding cake or ice cream pie.
2. A pudding pie to replace those yummy no-bake cheesecakes, but the only ingredients I can use are goat dairy products, such as goat milk and goat cheese.
3. A no-bake cheesecake using regular milk products, but low sugar.

For #3, would you be interested in a yummy dairy cheesecake pie made with honey?

No Bake Cheese Pie (Spice & Spirit)
1 cup cream cheese
1/2 cup farmer cheese
1 cup sour cream
1/2 cup honey
1 tsp vanilla extract
1 graham cracker crust
In a large bowl combine cheese, sour cream, honey and vanilla. Beat well. Pour filling into pie crust. Freeze for 8 hours or overnight.
Thaw pie in refrigerator for just 1 hour before serving. Garnish as desired.
It's really good.

I think that's a brilliant idea. Wonder if a vanilla pudding would be yummy. I'd really like to thicken it up enough to be able to cut it, or perhaps freeze it. My question is, how much starch is too much.

Here is the recipe:
Crust: use a graham cracker pie crust or make your own by crushing 1 package of graham crackers and 2/3 stick of margarine, - mix and place in a 9'' springform pan for 10 mins at 350. Let cool
Here is the Fudge part:
1 pkg of chocolate pudding (not instant)
3/4 cup of water
1/2 stick marg (or 1/4 cup)
3/4 cup of corn syrup
cook ingredients over low flame and cool
The recipe says to layer as follows:
Fudge
(vanilla) Ice cream
Fudge
Ice cream
and drizzle melted chocolate on top
We just make the pudding and puff whipped cream over it. Refrigerate.
