I would not.
Small appliances are not made to be on for so long.
(Doesn't it shut off automatically after a certain amount of time?)

K thanks guys. I am have a gas oven and burners and I am nervous to leave them on for so long. Any other ideas to be able to cook on YT?

I'll often use a crockpot on a timer. I imagine a George Forman would be good like that as well!

I recommend a grill pan. That's if you leave a burner on.
You can get an electric burner, however the nice thing about the gas is that you can adjust the flame on yom tov. (You can always raise it, and according to many you can lower it for the purpose of cooking. Check with your LOR.)

A carbon monoxide detector is a must, not just for yom tov. I make sure to have a yartzeit candle lit so if the gas fire goes out, I can re-light it right away.
I also have an outdoor grill with natural gas. It has a mechanical timer so the gas does not stay on more than 3 hours. I asked my Rav, I can use this on yomtov as well. (My husband had the timer installed after I left it on a few times. Comes in handy for yomtov. LOL.)

Leaving gas stove on for 3 days = really bad idea. |
1) Make sure your carbon monoxide detector works, AND
2) Leave the vent hood fan on.

Light a 3-day candle. Keep it near the stove. Keep the stove off until you need it. When you need to use the stove, bypass the ignition and use the candle to light it (I.e. use the candle to light a match or smaller candle which you use to light the gas stove and then let it go out.) Turn the stove off again when done.

Crock pot with a timer sounds like the safest idea on this thread. you can leave the crock pot on a higher setting so it acts more like a regular pot.
Makes me happy to have a really old fashioned stove and oven. So much easier on yomtov.

You can unplug the stove before Yom Tov (if you won't need the oven), this way there's no ignition to bypass.
HOWEVER as I understand it you can only turn a flame lower if needed for the food on it AND you can't turn it off unless there's a pilot. An oven is different. Once it's off (and if it's not electronic) we do turn it off on Yom Tov.
Here's one you may never have tried: TEA LIGHTS! They are slow but if you have enough time you can boil a small pot over about five tea lights placed around the actual burner. I have done it on Yom Tov! The best part is, no worries about stove staying on too long.
I will probably do my crockpot for Shabbo lunch and have it go off with a timer. Possibly to go back on early morning each day and thus I can warm up food for lunches (going out evenings BH so it's someone else's headache!)
