4 pieces chicken
1 Tbsp Soy sauce
1 Tbsp Lemon Juice
2 tbsp Honey
thyme
garlic
salt & pepper
Put half the sauce on the chicken, baste with the rest as it cooks
Similar recipes use rosemary.
Here's the thing. I bought skinned chicken which I think is much nicer with mayo & cornflake crumbs. So I'm thinking, mix the spices with the crumbs, and put a little soy sauce, honey & lemon with the mayo.
Do you think it will work? Would you use less?

I would do it thats part of playing in the kitchen.
I am not one that uses recipes exactly how it says and play around with the ingredients.
you wont know till you try!

I would marinate the chick in the soy sauce, lemon juice and honey for a few hours, then dip in the mayo followed by the crumbs mixed with the spices. Sounds good to me!

Thanks for your thoughts.
Or - could I skip the mayo? Will the marinade be enough to moisten the crumbs?
(I'm thinking I could always spray Pam if I had any.... I tried buying a spray bottle meant for oil. It smells like some kind of rancid oil, so that's not working : ( )

Yes, you can omit mayo. The marinade will make the chicken moist enough to roll in crumbs. However, when o make a very similar recipe, I make extra of the marinade so I can redip the chicken if necessary as I roll in crumbs
