I would like to make eggplant parmesean(sp?). What coating can I use? I'm gluten free plus off starches so no pot starch.
I know I can not use coating but I don't like the taste

I put puffed millet (it's a cereal) in the blender and used that for eggplant parm crumbs. Tastes great.

Try a tempura style batter using whatever flour alternative you do use (saying you're off starch can be very vague, but there are many kinds of flour, such as rice, garbanzo, gf oat, buckwheat, sorghum, coconut, etc).

Basically batter-fried instead of breaded. Make a simple batter, water and whatever flour you'd use should work (even better if you use beer, gf in this case, in place of the water). It should make a light, crispy coating. Not quite the same as breaded, but still good. Especially if you season it. You can use eggs in the batter too if you want.
Alternatively, you can make the batter, then sprinkle it over hot oil, and almost immediately scoop it out. You'll end up with a bunch of tiny light crunchy fried bits that you can use in place of breadcrumbs. Just dip the eggplant in egg and then the crumbs before frying or baking it.

Toast some ground nuts with seasoning and use that. Really delicous.

Why do you need to coat the eggplant?
Yes it's tastier, but I never missed it
Take the eggplant put it on parchment paper and grill in the oven, until desired done es.

Then you can also use Mary crackers, or take flax seeds and grind them and flavor that. I still prefer no coating to any of these alternatives. I guess you can use the cereal you can eat, and crush that, maybe rice crispies,

I love ground almonds (don't like almond flour for coating). Or you can use any other ground nuts except for walnuts, which are bitter.
Heat olive oil in a pan. Add ground nuts and season lightly with garlic powder, onion powder and salt. Toast for 2 minutes, stirring well.
