I think this is the one she used but am not positive.
Recipe is from gatherings;
1 cup boiling water
2/3 cup oats
1/4 cup margarine
1.5 cups flour
.5 cup brown sugar
1tsp bp
1tsp bs
.5 tsp salt
2 eggs
1 tsp vanilla
1 cup chocolate chips
Oven at 400. Combine water, oats, margarine- let sit for 20 minutes.
Mix all dry ingredients, add eggs and vanilla to flour mixture, mix well, mix in oatmeal mixture until moistened, stir in chocolate chips. Pour into greased or lined muffin tins. Makes 12 muffins, bake 20 minutes
