Shnitzel/cutlets are good at room temp so how about a shnitzel sandwich (maybe throw in coleslaw in the side) or chicken/shnitzel salad?
Using leftovers from dinner scores you double

What's wrong with deli sandwiches? Wraps from turkey, chicken, pastrami etc
What about actual salads as I would bring in bagged greens and whatever add ins I wanted and then add salad dressing at work.
I would also make grain or pasta based salads with veggies and protein. Whole wheat couscous makes a good base.

Quiche is good cold. I make one on Sunday ( 9x13) and that makes 4 lunches. We also like Quinoa salad with lettuce or spinach, beets, cucumber, corn, roasted sweet potato and a balsamic or herby dressing. You can make Greek quinoa salad with feta, olives and tomatoes. If it's a busy week we take pasta with tomato sauce and cut up cucumbers and peppers or peanut butter sandwiches. Chickpea bulgur salad is good cold . Avacado is good with crackers or bread and salami

I've started packing "mason jar salads" recently. I take dinner leftovers - usually chicken or fish - cube it and put it in a big mason jar. Then I top it with veggies (leftover roasted or raw) carrots, tomatoes etc. then I put greens on top. I take the jar to work, add dressing, shake, then dump it out on a plate.
It's really yummy and healthy and you can change it up a lot by using a different protein, veggies or dressing. I also like that I can clean up dinner by packing a couple of mason jars for DH and me. We have less leftovers to throw out.

you could dotuna, eggs a few ways, avacodo, lox, white fish salad, eggplant, chummos, cottage cheese, american cheese, peanut butter and all kinds of salads or just cut up veggys,do crackers, bread, bagels, add a yogurt,a granola bar, some fruit,a peace of cake.
or make him a sandwich with all these things.
if he likes cereal and milk you could put milk in a container and cereal in a bag.

I am thinking about getting a thermos so I can have a hot lunch. I am trying to kick my takeout habits.
If I am organized I will make salads at the beginning of the week like pasta, quinoa or barley and add veg, beans, cheese it lasts 3-4 days. I also make overnight oats which I dont end up eating until lunch time many days.
I also tend to leave things like cream cheese or sliced cheese, crackers, hummos, rice cakes or whole grain crackers in my desk/fridge. Then in the morning I just grab some fruit or veg and go to work.
