Some people davka use them, they say the kugel's creamier.
Unless you have the pickiest kugel eaters on the planet and this will totally destroy their oneg Shabbos, I think that to contribute to a calmer erev Shabbos, use the ones you have and don't go out again. Let us know how it turns out!

I only use yukon gold potatos in kugel. Imo its a better taste, and the color stays nice and yellow. Doesnt turn gray.

Yukon Gold makes fantastic kugel. My family calls it Yellow Kugel and it is often a request. I make with russets usually, so "yellow" kugel is a special treat that we all love!

A mixture of potatoes is my families secret for making the best kugle ever. I mix yellow, red, eastern, and only 3 russets.

I never use russets. Yukon gold if I'm buying potatoes specifically for kugel, red skinned if I'm using what I usually have around the house.
