I prefer potatoes soft rather than crispy so like doing them mostly covered.
Any nice recipe ideas (without any complicated ingredients)?

how about just quartering them, placing them in a 9x13 with seasoning and some oil, tossing and covering and baking them?? They are yummy and soft. I usually add some sliced onions and fresh garlic too

You can do barbecue inspired seasoning.
Either mix of chili powder, garlic powder, salt.
Or cumin, garlic and salt.
Or smoked paprika, garlic, salt.

Boil red potatoes with the skin on
Slice them 1/2 inch lay them on a cookie sheet
In a cup mix
Oil
Salt
Pepper
Garlic powder
Onion powder
Paprika
Paint it on the potatoes
Bake at 325 for about 1-1 1/2 hrs. They get a drop crispy but are very soft inside.

If you like them soft I would use the smallest red potatoes you can find and bake them whole instead of cutting them.
Drizzle some oil, paprika, garlic powder, salt and pepper and bake about an hour uncovered at 350

Toss small red potatoes or cubed Yukon gold potatoes (with the skin on) with olive oil, kosher salt, pepper, a couple of crushed garlic cubes and dried rosemary. Baked covered on 350 for an hour, pierce to check softness.
