Of course ask your LOR but most sabbath modes are a misnomer. The sabbath mode allows the oven to stay on for over 24 hours so it's helpful on YT. But as far as most ashkenazic customs you can not add food inro the oven on shabbos.
I use shabbos mode with the timer to have my oven go off on fri night to keep food hot. If the oven is not in shabbos mode and it goes off with the times bake it will beep alll day
You can in theory leave food in the oven until shabbos day but once you open the oven you need to take everything out. This is because opening the oven causes the temperature to lower and the oven to go back on causing the food cook

I do as Kumphort. I use the shabbos mode so that I can remove food Friday night without setting off the light. I use it instead of a blech as that gives me anxiety.

Shabbos mode that allows you to change temp is for yom tov, not shabbos. Cannot be used on shabbos itself.
