Use 2x the seasoning from here for a 12 lb turkey. Make sure to get the seasoning all over, under the skin, in the cavity.

Here's an unusual recipe, but fantastic and delicious:

1 10-14 lb. turkey
1 liter gingerale (diet is okay)
1/2 cup chicken soup powder
onion powder
garlic powder
paprika

Remove giblets from turkey cavities. Rinse turkey inside and out in cold water. Pat dry. Put on rack in roasting pan, and season heavily with onion powder, garlic powder and paprika. Roast at 325 degrees for 1 hour. Then sprinkle bouillon powder into bottom of pan (into drippings), and pour gingerale over turkey (making sure the bouillon powder gets mixed into it in the pan). Roast uncovered until turkey is almost done (about 1-1/2 hours more for a 14 lb. turkey, a little less for a smaller one, and a little more if you stuff the turkey). Remove turkey from oven, cool and carve. Skim and strain pan gravy. Return sliced turkey to gravy, and reheat (finishing cooking) in the gravy.

Rub a very thin coating of honey all over it. The honey is a humectant, and will keep all the juices inside. I do this with salmon too, and it is SO good! Just a tiny hint of sweetness, and it's nearly impossible to overcook.
