I have this large kielbasa sausage in my fridge- any ideas on how to turn into into a dinner for two?

Slice and serve over salad with warm crusty bread on the side, or mix into saucy potatoes, or into a white bean soup.

Iv'e put it in cholent or grilled on a grill.

Cube and bake with diced onions and beans, serve over rice or with potatoes.
Saute with onions. Add cooked diced potatoes to large skillet, fry a few minutes and flip. If oven safe, you'll be able to do the next step in the skillet then bake. Or, transfer as carefully as you can to a pan, make indentations for eggs, pour in a few eggs, and bake for 10 minutes.
